The idea of cozying up by the heater as rain taps on the window and you slowly sip a heart-warming soup is undoubtedly the best way to spend an autumnal afternoon. My Take On Minestrone Soup:
Pronounced: Min-eh-strow-knee
This recipe saved me during my early vegan years when I had no clue what to eat. I resorted to to this recipe almost weekly because it was so tasty and easy to make. This recipe is perfect for those who want to throw everything in a pot and (kinda) leave it to cook. So, for those days when you aren’t in the mood to watch over a pot, try this lazy, Minestrone recipe!
I love that this recipe can be tailored to whatever vegetables or pasta you have available. I’ve never tried it with anything but broken lasagna sheets, but I’m sure any other type of pasta shape will work. Make sure you add the uncooked pasta to the pot, or else you’ll end up with extremely mushy pasta!
Polish-inspired Smoked Tofu and Celeriac Soup
Whilst in Gdansk, I came across this dumpling restaurant, O.Mandu, and they had one of the best soups I’d ever tried. After translating, the soup was titled ‘white vegetable soup’. This white vegetable was a mystery to me. There are so many white vegetables… After our trip, I began scouring the internet for this mystery vegetable and even googled ‘Common Vegetables in Poland’ (lol, I know).
It turns out, celeriac is a common vegetable in Poland (?) and I googled other celeriac soups and it looks extremely similar. I’d never tasted a celeriac before (I don’t think), so assumed it must be that. I found a recipe I wanted to try and to my surprise, on my first attempt, this soup was almost an exact copy of what I remember. I jazzed it up a little, I made it sweeter (by adding parsnips) and I added smoked tofu to the recipe, which turned out amazing.
So, the exact recipe I followed is somewhere on the internet and I can’t for the life of me find it, so take this one I had scribbled down on my notes (don’t worry, I made it look prettier). You’ll love it!
Liz’s Cozy Chicken Pot Pie Soup
I stumbled across this recipe on TikTok and immediately ran to the supermarket to grab all the ingredients. Best. Decision. Ever.
You can find her recipe here, however I created a recipe card so you can access it on the go, whilst shopping for the ingredients and whilst you’re cooking (I hope that’s okay Liz?!). I also made it a little more UK-friendly. Liz’s recipe includes a ‘biscuit’ heart, but I have yet to make that. I’m not exactly sure what a biscuit heart would be in the UK. Possibly a puff pastry type of thing?
Anyway, if anyone knows how to make this in the UK, do let me know! I’d love to decorate my bowl with little pastry hearts! You MUST give this a go (it’s my boyfriend’s favourite meal!)
Okay, I know it’s a little weird to share random recipe cards with you. But since it is starting to feel like autumn, I thought some of you would really enjoy some food inspo. I know I love a good recipe for cozy soups, especially during autumn. They’re my go-to because soup is super easy to make and generally quite healthy – specially since cream is not a main ingredient in any of these soups.
Likewise, I remember a lot of you asking about the celeriac soup recipe after i shared it on my stories. It’s about time I shared it with you, isn’t it? Anyway, if you do try any of these cozy soups over the autumn season, make sure you send them to me so I can share them on my own story.
