Autumn is the most beloved time of year when it comes to food, especially for me! I love everything that associated with a cosy meal, which is why it’s my duty to encourage you to make these hearty meal ideas for fall, because they’re bound to get you excited for the change of season! A Classic, Vegan-Friendly, Vegetable Curry
This is probably my most made and loved recipe. There’s really nothing heartier than a homemade, creamy curry and this one has almost every vegetable included.
It’s one of my favourite hearty meal ideas for fall because it’s an easy way to get all the vitamins and nutrients I need from the vegetables.
Not only that, but it’s super easy to make. You only have to throw everything into a pot and let it cook. Likewise, this recipe easily lasts me a week and it’s freezer-friendly!
A Creamy Spinach and Tofu Ricotta Pasta
Probably the most indulgent (thanks to the cashews) meal out of the three, but I always roll my eyes in immense satisfactions upon taking the first bite.
This one is definitely a little more complex to make, however once you know the recipe, it will become second nature and you’ll be craving it every day.
I love the combination of the sweet potato with the salty cashew and tofu ricotta and just writing this out now is making me crave it. And I already had some for lunch!

Wagamama-inspired Yasai Pad Thai
Now, when I say this is my favourite meal, I 100% mean it.
Originally, this recipe is a tofu based one, but I don’t think anyone would judge you for replacing the tofu with chicken or another animal protein of your choice.
This meal is what made me fall in love with vegan food and the creativity that comes with vegan food. When I first tried this meal, I HAD to recreate this recipe at home. Luckily, I received a Wagamama cook book as a present for Christmas. Now, I’m sharing the recipe – with my amends – with you!
